Mashed Potatoes

GREEK SALAD
Kosher salt and freshly ground black pepper
4 tomatoes, seeded and cut into chunks
1 medium red onion, sliced thin
1 medium cucumber, sliced thin
1/2 pound feta cheese, crumbled
1/2 cup kalamata olives, pitted
1 head romaine lettuce, torn into bite size pieces
1/3 cup Italian dressing

Salt and pepper the tomatoes, onion and cucumber. In large bowl, toss tomatoes, onion, cucumber, cheese, olives and lettuce with dressing and serve.




Butter Bean Salad
2 cans butter beans, rinsed and drained, 15 ounces each
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ground cumin, 1/3 palm full
2 tablespoons extra virgin olive oil
1 large lemon, juiced
Coarse salt and freshly ground black pepper

Combine all ingredients in a medium bowl. Toss to coat beans and vegetables evenly in dressing.

Shrimp and peppers make me think cajun food, which leads me to dirty rice or cheese grits, or if you prefer, a Spanish-style fried rice which can give you a sort of paella flavor combination.

Angel hair pasta...Very lightly oiled...
As my guess is that you have rice in the peppers...
Fresh tomatoes,cut and mixed with oregano and oil...
A nice fresh loaf of oven baked bread and butter...
And your favorite white wine...

As far as the oil goes...
Virgin olive...
Or Canola...

Balsamic Green Bean Salad

1 pound fresh green beans, trimmed
2 tablespoons chopped shallots
2 tablespoons chopped garlic
1/4 cup balsamic vinegar
1/4 cup olive oil

DIRECTIONS:
Place green beans in a large saucepan. Fill with enough water to cover green beans, and bring to a boil over high heat. Reduce heat to medium low, and simmer 10 minutes. Drain, and let cool.
In a bowl, stir together shallots, garlic, balsamic vinegar, and oil. Pour over green beans. Cover, and refrigerate at least 1 hour. Serve cold.


Dijon Mashed Potatoes

3 large potatoes, peeled and cubed
3/4 cup reduced fat sour cream
1/2 cup nonfat milk
2 tablespoons Dijon mustard
garlic salt to taste
ground black pepper to taste

DIRECTIONS:
Place the cubed potatoes in a pot with enough water to cover. Bring to a boil, and cook 15 minutes, or until tender.
Drain potatoes and transfer to a bowl. Mash with a potato masher, and gradually mix in the sour cream, nonfat milk, and Dijon mustard. Season with garlic salt and pepper.


Yummy Garlic Bread

INGREDIENTS:
1/2 cup butter, softened
2 tablespoons mayonnaise
1/4 teaspoon sage
3 cloves garlic, chopped
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon black pepper
1 French baguette, halved lengthwise
2 tablespoons grated Parmesan cheese, or to taste

DIRECTIONS:
Preheat oven to broil.
In a medium bowl combine butter, mayonnaise, sage, garlic, oregano, salt and pepper. Spread mixture evenly on bread and sprinkle with Parmesan cheese.
Place bread under broil for 5 minutes, or until lightly toasted.
