when called for in cooking are they interchangeable?

NO - Feta is marinated in brine, and regular goat cheese is not - although both are made of goat milk, Feta can also be made with sheep's milk.

The recipes will not taste the same if you interchange one for the other. That doesn't mean they will be bad - just different from the recipe.

Also, goat cheese melts much better - feta melts, but separates.

Feta cheese can also be made from sheep's milk. It has a sharper, more salty flavor than goat cheese. The texture is also different. Feta is drier and more crumbly. I use feta in salads, goat cheese with crackers as an appetizer. I've never actually cooked, as in using in a hot dish, with either, but there is a local restaurant that does a potato/feta cheese soup.

Many traditional Feta cheeses are made from goats milk and are common throuhought the middle east. More often Americans eat cows milk feta, which is simply a cheese that has been dried out by soaking in a salt solution.

Goat cheese (Chevre) is a soft creamy cheese made from goats milk with little to no aging. You can sub goat feta for cows milk feta in a recipe. Dont sub goat cheese for feta in a recipe, they are too different.

Feta Cheese is a Greek crumbly cheese made of goat milk, traditionally. Some domestic (American) types are made from cow's milk instead, and are somewhat more mild in taste. Feta cheese may or may not be acceptably interchangeable for 'goat cheese' in a recipe - it depends on the recipe. The more generic term 'goat cheese' may be referring to a popular, but much less salty tasting goat's milk cheese, such as the French stylel 'Chevre'. Chevre is creamier, slightly more 'gamey' in flavor, and generally less salty. If using Feta, make sure to reduce any added sodium, or sodium rich ingredients. : )

the main difference is that goat cheese is not a cured cheese.feta is cured in brune. a second difference is that feta is a curd cheese, usually made with a mix of goat and sheep milk, while feta is a soft block cheese made soley from goats milk.
for baking they aren't too interchangeable, but either work great in salads.

Usually, there is no difference. But some feta cheese isn't really made from goat's milk. So it's imitation feta cheese. It tastes the same too.

There are other cheeses beside Feta made from goat's milk. One popular one in France is Chevre; it is a semi-soft cheese and much milder than Feta.

Goat cheese is creamy and soft, kinda spreadable. Feta is salty and crumbly. I wouldn't say they are interchangeable, per se, as they have very different flavor and texture, but for some recipes I'm sure it would work.
