Oven Fried chicken breasts
8 to 10 chicken breasts 1 stick butter 1 package of herb seasoned stuffing cubes crunched to crumbs
Dip chicken breasts in melted butter, then in crumbs. Put chicken on aluminum foil lined cookie sheet. Keep separated.
Bake at 350 to 40 degrees to one hour, depending on size of breasts or until golden brown.

Italian Chicken
4 large chicken breasts, skinless cut in half 3 large eggs or four small 1 cup good parmesan cheese (preferably fresh grated) 1 cup Italian bread crumbs ¼ cup Italian salad dressing ¼ cup butter
Wash chicken and pat dry with paper towels. Dip chicken into eggs. Combine cheese and bread crumbs. Coat chicken thoroughly with bread crumb mix. Put on a greased cookie sheet. Drizzle with salad dressing and place pats of butter on each piece of chicken.
Bake at 350 to 400 degrees for forty five minutes.

Fourth of July Chicken
6 chicken breasts boneless and skinless 1 toe of garlic 1 stick of butter 1 ½ teaspoons of salt 2 teaspoons of chili powder Dash of black pepper Dash of dry mustard Juice of one good lemon 2 teaspoons of Worcestershire sauce
Melt the butter; blend in garlic, salt, chili powder, pepper and mustard.
Add lemon juice and Worcestershire sauce. Put chicken in shallow baking dish. Pour butter mix over chicken. Cover and bake for thirty minutes at 350 degrees. Uncover and bake at 325 degrees for an additional 35 to 45 minutes, basting frequently.

Krispy Kreole Chicken
6 chicken breast skinless boneless, halves ½ cup of bread crumbs, crushed fine 2 tablespoons parsley 1 toe garlic 1 ½ tablespoons Creole seasoning ¼ cup Italian dressing Have oven preheated to 325 to 350. In a large plastic bag mix chicken with salad dressing. Marinate for at least an hour refrigerated. Combine Creole seasoning, bread crumbs, parsley, and garlic.
Dredge marinated chicken breasts in crumb mix. Place chicken breasts in a 13x9x2 inch baking dish greased or sprayed with cooking oil. Bake for 45 minutes or until tender and juices run clear.

Golden Baked Chicken
4 chicken breast, boneless, skinless 11/2 cups of buttermilk ¾ cup of flour ½ teaspoon salt ¼ teaspoon pepper ¼ cup butter 1 can cream of golden mushroom soup
Mix flour, salt and pepper. Dip chicken in ½ cup of buttermilk. Roll in flour, salt, pepper mix. Melt butter in a baking pan. Bake at 425 degrees uncovered for 30 minutes. Turn and bake 15 minutes more. Turn breasts again. Pour buttermilk and cream of mushroom soup mixed together over chicken. Bake an additional 15 minutes.
Fancy Pants
If you only try one of my main courses, let it be Fancy Pants.
2 pounds of good ground beef 1 pound of New York sharp cheddar cheese Granulated garlic 2 (15 ounce) cans of tomato sauce Salt and pepper
Form eight equal patties from the meat. Cut the cheese into slices, place equal amounts of cheese on half the patties and place remaining patties on top of cheese. Pinch the edges so cheese doesn’t leak out. Sprinkle the bottom of the pot with granulated garlic, brown patties on each side (there’s no need for oil) and cover with tomato sauce. Cook until done over medium heat for about thirty minutes.

*Bacon Cheese Franks
8 hot dogs Cheddar cheese cut in strips 8 slices bacon
Slice hot dog lengthwise 2/3 deep. Fill each hot dog with cheese. Wrap each one with a slice of bacon. Broil until bacon is done (about ten minutes). Good served with baked beans and cole slaw.

*Easy Sunday Ham Recipe
Any size ham for your family needs (approximately ½ pound per person) 1/3 cup yellow mustard 1/3 cup brown sugar (light or dark) For larger ham increase these amounts
Mix mustard and sugar. Coat ham thoroughly with mixture. Pre-heat oven to 325 degrees. Tent with aluminum foil and bake for approximately 1 hour per pound. Excellent as a leftover.

*Roast and Noodles
3 pound boneless chuck roast (trimmed) Granulated garlic 3 bay leaves 1 (14 ounce can whole mushrooms)
2 (28 ounce cans) tomato sauce 1 lb. egg noodles (cooked according to package directions)
Sprinkle bottom of large pot to cover with granulated garlic. Brown chuck roast on both sides. Cover with tomato sauce, mushrooms and bay leaves. Cook on medium low heat about 2 hours. Remove roast and place on a platter. Remove bay leaves from sauce. Mix noodles with sauce. All you need to complete the meal is a green salad.

*Pork Tenderloin
3 to 4 pound pork tenderloin 1 medium onion chopped 1 (15 ounce) can tomato sauce A few shots of Worcestershire sauce
Place the tenderloin on a large piece of aluminum foil. Mix the other ingredients and spread over meat. Close foil and put on a shallow pan. Bake at 35 degrees for about 5 hours. Slice meat into medallions and pour gravy over meat. Serves 6 to 8 people.

*Sloppy Joes
2 pounds lean ground chuck 1 medium onion chopped 1 (15 ounce) can tomato sauce Granulated garlic Salt Hamburger buns
Brown meat and onion. Add tomato sauce and granulated garlic and salt to taste. Serve on hamburger buns.

Get a good cookbook. I recommend the Recipe Encyclopedia. And watch some cooking shows. There are basics that everyone should know before attempting to cook anything, and cooking shows are a great way to pick up on techniques. After you have a good cookbook and have a few cooking shows under your belt, it's a matter of trial and error. Always have a back-up plan for dinner if things don't go right, because that will happen, no matter how skilled a chef you are.

The easiest way to do quick but good meals is to buy prepared foods that aren't processed.
Instead of buying a whole chicken, buy some chicken breasts, and look for a good sauce to go on them. One of my favorites comes from a small chinese grocery store. It has 4 ingredients. sugar, water, peppers and garlic. All I do is put some sauce in a zipper top bag, with the chicken, and let them sit on the counter for an hour, then BBQ it, or bake in the oven and it's done.
There are alot of great pre-made sauces and no-salt seasoning mixes out there. Play with them to find what you like. Once you're comfortable with this kind of cooking, you can start to get a little more daring. Instead of buying a pre-made spice mix, look on websites like recipesource.com for how they're made, and try making some yourself. Soon you'll be making greek marinated lamb wrapped in a pita from scratch, and wonderig how you got to be so good a cook

Lemon Broccoli Chicken
Prep/Cook Time: 20 min.
Ingredients:
1 lemon
1 tbsp. vegetable oil
4 boneless chicken breast halves
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Broccoli Soup OR 98% Fat Free Cream of Broccoli Soup
1/4 cup milk
1/8 tsp. ground black pepper
Directions:
CUT 4 thin slices of lemon. Squeeze 2 tsp. juice from remaining lemon.
HEAT oil in skillet. Cook chicken 10 min. or until browned.
ADD soup, milk, lemon juice and black pepper. Top with lemon slices. Heat to a boil. Cover and cook over low heat 5 min. or until done. Serves 4.
TIP: Serve with steamed sugar snap peas and seasoned long-grain and wild rice mix. For dessert serve frozen yogurt.

Pork bbq--put a couple pounds of pork loin in a crock pot, dump a bottle of bbq sauce in there, cook on low for 8-10 hours, pull/shred the pork with a couple of forks.
For learning to cook, I firmly believe if you can read and follow directions, you can cook. Find a good basic cookbook that will give definitions of some of the terms, and start cooking. Joy of Cooking is a good starter, but browse your local bookstore, and pick one that speaks to you.

Bring pot of water to boil, add pasta & vegies. Drain & add half a jar of Alfred sauce and chicken to heat. Great w/a loaf of French bread from the grocery store bakery & a salad.

ok, go to your freezer section of your local grocery store. Stauffers has some quick, easy meals that you just pop into the oven. They even come with the meat and the potato or mac and cheese. I started this way.
