Cut up into cubes. Put a little olive oil in a pan over high heat, add the chicken and cook until golden brown. Add a little salt and pepper to taste, lemon juice (about 1/2 a lemon), good quality soy sauce, and stir all together. Top with sesame seeds and serve with white rice.
No set quantities here. This is a throw together dinner we make frequently.

Any thick teriyaki sauce and chicken are great friends. You can let the breasts cook over medium heat in the sauce. Add some stir-fried carrot and onion, and serve over rice. You can garnish with pineapple chunks, kids tend to like that addition.
If the breasts are decent-sized, use a knife to split the thicker parts of the breast so it lays flat and is even (or use a mallet) and then layer your favorite ham and swiss cheese. Roll the chicken up, pin it down with toothpicks, and roll it in an egg wash and then seasoned breadcrumbs. Put the rolled chicken in a glass dish and cook at about 350F until they are cooked through and browned. You can do chicken parmesian the same way, just use mozarella instead and serve topped with marinara.
It doesn't take too long to prepare and cook, but it does make a mess.

LEMON AND HERB CHICKEN
this is a great recipe i found online and then modified for chicken breasts instead of a whole chicken:
-1 1/2 cups olive oil
-chopped parsley (put in as much as u'd like ... i'd recommend about a handful)
-some thyme (optional)
- salt
-pepper
-a few tablespoons of lemon
-a garlic clove, finely chopped
-6 chicken breasts
1. preheat oven to 400F
2. clean the chicken
3. mix all the other ingreadients in a bowl, xcept for the thyme
4. coat each of the chicken breasts with the olive oil mixture
5. place the coated chicken in a pan (i prefer glass baking dishes) and pour the leftover olive oil mixture on top of the chicken
6. add enough water so that the chicken is barely covered
7. bake for an hour and a half
it ends up tasting excellent and goes great with anything ... plus it's very healthy and not too hard to make ... i enjoy it with salad and mashed potatoes or rice :-)
also, i don't really measure out the ingredients any more because i've cooked the chicken like this enough times to get a basic idea of how much of each ingredient i need ... u can modify anything u'd like and it'll still turn out great

Teriyaki chicken breasts. Just buy some Kikoman teriyaki sauce at the store, a small bottle, and some soy sauce, like a quart, Heat up the soy sauce in a sauce pan, and add about 2 tablespoons of the teriyaki sauce. (It's really strong) Then add about 1/2 cup of pineapple juice, (I buy a can of sliced pineapples and use the juice out of that, and serve the slices on top of the finished chicken for garnish) and add a cup of brown sugar. Then mix about 6 oz of water with cornstarch, mix till a nice thin texture without lumps, and add to boiling sauce. Then cook your chicken, and add the teriyaki sauce that you've made right before you take off the grill or char broiler. I hope I explained this right. Ron

Look on the back of the Mccormick, taco bell or other seasoning pak for chicken enchilada's. They are great. You cut 3-4 chicken breast into 1/4 to 1/8 inch strips and fry them in about 2-3 tbs of olive oil. Cut up and onion and green pepper and drop them in the pan on the chicken. along with the contents of the seasoning packet and some water. When they are done, wrap them in a large flour, or whole wheat wrap with some cheese, salsa and sour cream and pig out. It makes a whole bunch and they are very good.

Pound out boneless chicken breasts and oil them in vegetable oil. Combine a package of ranch dressing (dry) and 1/2 cup of Parmesan cheese and dredge the breasts in the mixture. Bake at 350 for 20 minutes on each side..great flavor..

Here are two of my favorites, and both freeze well.
Crockpot Rotissiere Chicken
One Whole Chicken ( can also use chicken parts)
Olive Oil Pam spray
Lawery's Season Salt (No substitutes)
Tin Foil
Wash and dry off chicken...Spray Chicken all over with Olive Oil Pam Spray...and then season with Lawery's Season Salt...Take Tin Foil and make about 4 tin foil balls the size of tennis balls or so... Spray Crockpot with Olive Oil Spray and put the tin foil balls in bottom of crockpot...Put chicken on top of tin foil balls breast side down...DO NOT ADD ANY WATER...Place cover on and make sure it fits properly (if need to push on chicken to squish tin foil balls alittle until cover fits)...Set on High (will not work on Low) and Cook for about 4-5 hours...(a 3lb chicken will take about 4 hours)...When lifting out of crockpot, it will literally fall off the bone, so be careful...:-)...I usually spoon some of the juice over the pieces of chicken before serving....ENJOY!!!
This is so yummy! I make the foil balls between golf and baseball size. The chixken is the moistest I have ever had. The original recipe calls for a whole chicken, but I have made it with just breasts.
Baked Chicken Poupon
4 T Grey Poupon Dijon Mustard
2 T water or Olive Oil
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp Italian Seasoning
1- 1 1/2 lb. boneless chicken breasts.
Mix all ingredients but chicken in bowl.
Place chicken in roasting pan and brush with mixture.
Bake 20 minutes or till done at 375.
I bake mine longer so it just falls apart

Lay chicken breasts in a 9x13. Salt & Pepper them. In a bowl mix together cream of chicken and sour cream. I mix in a little milk to thin it to a "sauce" consistency. Pour / spread over chicken breast.
Put ritz crackers in a zip lock and crush. Pour in enough melted butter/ margarine to make a crumbly texture. Sprinkle on top of chicken . Bake @ 350 for about 30 minutes or until chicken is done. Delicious!

CHICKEN CHIPOTLE
My favorite recipe is to marinate the chicken breasts with some soy sauce (garlic if you want), then grill them.
Meanwhile, make a sauce by blending some peanut butter, creme fraiche (cream) a clove of garlic, a couple of chiles chipotles. (the smokey type that come in a can). If too thick, add more cream or evaporated milk.
Cover your grilled chicken with the sauce and bake them or microwave them. If you like spicy food, you will love this one! You can also use this sauce to pour it on crepes filled with chicken.

We just ate that for supper. Don't know if it is unique but my kids like it cooked with cream of mushroom soup and served with rice. Still eating some now. Simple and tasty but I guess not unique. My mom's version of chicken ala king she taught me.
Also add seasoning either while cooking the chicken or when soup is added. I just used garlic powder and pepper. My kids are picky eaters and they love it.
