I use to have this recipe for spinach salad that had a mayo and ketchup sort of dressing. Any ideas?

I don't know about one that has mayo and ketchup sort of a dressing but my favorite is this one:

Ingredients:

- 1 cup Extra Virgin Olive oil

- 1/3 - 1/2 cup Balsamic Vinegar

- 1 tsp Dijon Mustard

- 1 clove garlic, crushed

- Salt and Pepper

- 1/2 - 1 lb crisp-fried bacon

- 4 hard-cooked eggs, chopped

- Cubed cheese (optional)

- Coarsely chopped pecans

- 1/2 - 1 lb fresh spinach

Tear spinach into bite size pieces

Combine spinach with bacon, egg, cheese, nuts

Combine oil, vinegar, mustard, garlic, salt and pepper

Dress salad to taste just before serving

I like this salad as an alternative to Caesar Salad because the spinach has so much flavor and better texture than romaine. I don't like to skimp on the other salad ingredients, because they add so much flavor and texture, without overpowering one another. The dressing ingredients can be modified any way you like. I like my salad dressing to be more acidic so I use the 1/2 cup vinegar. You can use more Dijon Mustard, however, I prefer in this recipe that it acts only as an emulsifier, rather than a significant flavor component.

This can be either a side salad or main dish. Fresh spinach goes a long way, so 1 lb is quite a bit.

Remember the Cubed Chesse is optional I only use it for a better taste, but if you don't want to use it, that's fine (smart choice) this chesse is expensive and it has 23g of fat, 10g of satured fat and 35mg of cholesterol per 8 cubed pieces, so my suggestion is that don't eat it, it's your decision.

So enjoy your Spinach Salad, and sorry about not helping you with the mayo and ketchup sort dressing, but if you would like to, you can add to your salad a little bit of mayo and some ketchup; i've tried it and it tastes very good.

Spinach Salad

I think it's a terrible thing to do to spinach, but I know a lot of people who use thousand island aka the secret sauce as the dressing on their spinach salads. They love it. You can make your own, and it is just that, ketchup, mayo and some sweet relish.
If you haven't tried the hot bacon dressing, you really should. A couple people put up recipes for it before me...
Honey, dijon mustard and basalmic vinegar mixed with olive oil is another excellent spinach dressing.

I love spinach salad and created a recipe that really is Super!
3 tablespoons mayonnaise
1 tablespoon lemon juice
2 garlic cloves, crushed
1 tablespoon vinegar
1 tablespoon worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 teaspoon pepper
1/4 cup olive oil
1 bunch fresh baby spinach
1 egg, boiled sliced
1 cup fresh mushrooms, sliced
1/4 cup bacon bits, home made
1 cup croutons
1/4 cup swiss cheese

8 servings Change size or US/metric
Change to: servings US Metric

20 minutes 20 mins prep

Whisk together mayonnaise, lemon juice, vinegar, garlic, worcestershire sauce, honey and pepper.
Slowly drizzle in the oil. Set aside. Combine spinach with mushrooms, bacon bits, croutons, cheese and eggs.
Toss with the dressing.

Spinach Salad 8 ounces young spinach 2 large eggs 8 pieces thick-sliced bacon, chopped 3 tablespoons red wine vinegar 1 teaspoon sugar 1/2 teaspoon Dijon mustard Ingredients Kosher salt and freshly ground black pepper 4 large white mushrooms, sliced 3 ounces red onion (1 small), very thinly sliced Directions Spinach Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside. Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside. While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside. Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper. Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper and serve immediately.

Here's the one that I have.

Hot spinach salad dressing
1/2 cup oil (or bacon grease)
1/4 cup ketchup
1/4 cup vinegar
1 small onion, chopped (or less to taste)
1 Tbsp. worchestershire sauce
1/2 tsp. salt

Mix all together and bring just to a boil.

In bowl break up 6 strips cooked bacon, 4 chopped hard boiled eggs, a desired amount of spinach leaves and additional chopped onion, if desired.

Pour warm dressing over greens just before serving.

Baby spinach (pull stems off)
drained mandarin oranges OR granny smith apple tidbits
crispy crumbled bacon
purple onion rings
add a simple vinaigrette and toss

I've also seen th eabove w/ a warm dressing, and the dressing includes some of the bacon grease. Devilish but darn good! :-)

My favorite spinach salad is simple:

Baby spinach leaves
Cherry or grape tomatoes (halved)
Fresh Raspberries
Annie's Brand "Raspberry Vinaigrette Dressing"

Toss together and serve-- YUM!

Croutons, bacon bits, sliced raw mushrooms, hard boiled egg sliced, grilled chicken, spinach and topped with ranch dressing. Yum!!
