We got married on Saturday and for the reception my mom made linguine with tomatoes, cucumbers, and olives in it. There is alot left over and we were contemplating on freezing it so we would have it at a later time and weren't wasting food. Any suggestions or information?

That is one dish due to the tomatoes and cucumbers will not freeze well as they will turn to mush when unthawed. Remove them and you can and replace them later with fresh ones. It's either that or chow down! Had the same problem at my wedding everyone had to take a dish home when they left the reception!

It's been my experience that a MIX like you have will not freeze well at all. The cucumbers will thaw out into mush and you will loose a lot of the tomato's texture and taste too. I can't imagine what the linguine will turn into. The only thing you can try to be the most safest would be one of those food saver vacuum packers. This sounds like a dish thats best first time around. Congrats on tying the knot!

If you make sure you freeze it in an airtight container it should be fine. A lot of places sell containers specifically for that kind of thing I think, or you could use one of those disposable serving containers that they sell at the grocery store and then cover it with a layer or two of aluminum foil. Usually with meat I just use Ziploc freezer bags but I've never frozen pasta before. Hope that helps and congratulations on getting married!

Cooked pasta freezes great, but the vegges don't. If there is a sauce with it, you might be able to freeze the pasta in the sauce, or maybe you can freeze that separately. Then when your ready to eat, thaw the pasta and sauce, then add fresh vegges. That might work.

You should discard the leftovers immediately! Forget freezing this...don't even eat one more bite! You are flirting with serious food poisoning! For sentimental purposes, as well as assauging any guilty feelings, ask your mother for her recipe as soon as possible because no matter how many times she might have made it before, the one she made for your wedding was the most special and to her, the best one she has EVER made!

tomatoes and cucumbers do not freeze well. they will come out watery and mushy. I freeze tomatoes from my garden to make sauce, that is how I know this. freezing this dish will totally change the flavor and texture.

Cucumbers do not freeze well. I'd pick them out then freeze the rest in pans.

Can't freeze fresh tomatoes, only dried ones, and fresh cucumbers. Heck, just eat it for the next fortnight.
