I used this recipe and it worked well.

Ham 'N Cheese Omelet

Prep Time: 5 min
Total Time: 15 min
Makes: 2 servings, half of an omelet each

2 eggs

2 Tbsp. milk

4 slices OSCAR MAYER Shaved Smoked Ham, chopped

1 tsp. thin green onion slices

dash pepper

1/4 cup KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese

BEAT eggs and milk in small bowl with wire whisk until well blended. Add ham, onion and pepper; mix well.

SPRAY 8-inch nonstick skillet with cooking spray. Pour egg mixture into skillet; cover. Cook on medium-high heat 6 minutes or until egg mixture is set but top is still moist.

SPRINKLE cheese evenly onto half of omelet. Using spatula, fold egg mixture over filling; cover. Remove from heat; let stand 1 minute. Cut in half to serve.

If you like ham in your omelet, try grilling the ham first. It tastes so much better when it's had a chance to caramelize and gain more flavor. Veggies are better cooked beforehand too. I dice them and then allow them to simmer in their own juices until there's virtually no juice left. Also a great flavor enhancement to a simple ingredient, and your omelet won't get watery. Mushrooms and tomatoes work especially well when cooked this way and then added to the eggs. Don't forget the cheese!

Three jumbo eggs--whip them in a blender with a little milk for the fluffiest omelets. A few slices of pre-cooked bacon, some tomato slices and Swiss or Sharp cheese. I like my omelets with mayonnaise instead of ketsup. Some wheat toast covered with butter and orange marmalade on the side--yum!

Ok, this is how my dad makes his.......
Steak marinaded in Italian dressing, grilled and chopped/diced/shredded (your pick)
American shredded cheese
Green onions
Mushrooms
Either cook the egg then fold in the mixture, or mix into the eggs while cooking
Serve with A1 Steak sauce

This has been such a popular item at my house, he once made 300 omlets for a family reunion!

I use 3 eggs, ham, bacon bits, mushrooms, your choice of cheese, even garlic. I also beat the egg whites separate. That really adds a fluff.
