Hey all, I bought some salmon for dinner tonight and would like to cook it in the oven. Should I put it in a baking pan with butter or oil? Do you put lemon on at this point? How long should it be cooked and at what temp? What herbs/spices do you recommend?

butter, but if you add some oil you get the flavor of butter and it helps keep the butter from burning. As for herbs I recommend basil.If Lemon juice is good. so is a dry white wine. How long depends on the size of your fish. When the meat is flaky it's ready to eat.

If the salmon is boneless and skinless it can be cut into serving sized pieces, 2x2 or so. Put 1/2 cup to 1 cup water in a fry pan add 1/2 tsp to 1 tsp chicken soup powder base to water and bring to slow boil Place pieces of salmon into pan and cook for 2 minutes on first side then turn the pieces over and cook 2 minutes on second side. Close off heat and cover pan with a lid and remove and let stand to finish cooking for 3 minutes. Very easy and delicious. Do not overcook the poached salmon. Salmon should be opaque when done. Serve with a tartar sauce, using 1/4 cup Kraft Miracle Whip, 1 tsp green sweet relish and 1/2 tsp lemon juice.

I make mine this way and everyone LOVES it!!!

Wash the salmon
Place it in the pan and sprinkle Lemon pepper on it
If you have them queeze citrus juices on it: 1 lemon, 2 limes (they are small), 1 orange, 1grapefruit Add butter about a 1/2 stick or a stick if you like the butter taste
bake in oven at about 350 degrees for 15 mins
remove and add shrimp if you have it and a little more butter about 1tbs
cook an additional 10 mins
remove and serve or of you like spinach add spinach to the pan and bake for an additonal 5mins

The reason you add the ingrdieants at different times is because you don't want your shrimp or spinach to be over cooked.

Several great ways to make salmon in the oven.

Use a broiler pan, put a little water in the bottom of the pan. Spray the top pan so the fish doesn't stick.

My daughter's favorite is, rub in a little olive oil, salt and pepper, smother with brown sugar and drizzle honey on the top. Broil until it is bubbly, about 20 minutes. It is sooooo good. Enjoy!

Another favorite is rub in brown sesame oil, salt and pepper. It has a great Asian flavor. Again I broil instead of bake, and do so for 20 minutes or until fish starts to get brown, and flakes.

This is how I cook mine in the oven. First you need to wash and pat dry with paper towel, place the salmon on a non-stick Cookie sheet ( a good quality one that's sturdy in high temperature), season with with salt and pepper on both sides, rub some olive oil on the bottom side of the salmon. Then spread a 1/4 inch layer of mayo (don't use the low fat kind) on top, make sure the top is completely covered with mayo, sprinkle some minced dill. Pre-heat the oven to 475 degree, place your room temperature salmon in your heated oven for 8 minutes, take the salmon out and tent it with foil and rest for 5 minutes. It's pink, Moise, juicy inside and golden brown on the top. Serve with a wedge of lemon.

Butter & Lemon (yes, add the lemon slices on top before baking)

Blackened seasoning (cajan) rub in and bake till done. Add a little bit of butter to the pan.

Honey & Soy Sauce (mix to your desired 'sweetness') and smear on top of fish, cook till done.

Bake @ 350 for about 30-40 minutes -- depends on how thick the Salmon is and how well done you like it. Remember to spray pan with Pam (or something similar) -- Salmon sticks and you want it to come out in a clean piece.

I put tin foil in a baking pan and spray the tin foil with pam spray or
a dab of butter or margarine then i put the salmon on top , i usually
will put either a little olive oil or a pat of butter on top , add pepper,
parsley and sprinkle italian flavored bread crumbs on top. I add to the sides of the fish sliced up raw potato, or parsnips, cut up carrots, onions celery add pepper and parsley , loosely fold remaining tin foil so that its in a closed pocket or pouch like setting
and bake on low 350 degs for around 20-30 mins until fish is
flakey.

I put it on a baking sheet with high sides, lined with foil. My favorite way to prepare salmon is to put a little olive oil underneath, so it doesn't stick. Then drizzle lemon juice over the top, then sprinkle with salt, pepper, and dill. Bake or broil until it's white all the way through and flaky.

butter on top of the fish sprinkle on some old bay put foil in a baking pan folded up like a bowl with some water in the bottom. bake @ 375 for probly 10-15 mins...inside of fish should be light pink and firm.

oh yea...blackened seasoning is good too..butter up the top and season depending on how spicey you want it..if you cot a cast iron skillet slap it blackend side down without button on the pan and bake @ 400 for about 10 mins

Salmon Fillet With Mustard Sauce
Yield: 6 Servings

Ingredients

6 salmon fillets abt 7 oz each
1 1/2 oz clarified butter
1 1/2 oz vegetable oil
1 lemon, thinly sliced

----------------------->>> MUSTARD SAUCE:-----------------------------
1/4 c shallots, minced
1 oz butter
6 oz dry white wine
1/2 c heavy cream
3/4 tb stone ground mustard
1/8 c chives, chopped
1/8 c parsley, chopped
1 salt to taste

-------------------------->>> GARNISH:--------------------------------
1 miniature pear tomatoes
1 parsley sprigs

Instructions

Arrange salmon fillets in baking pan, drizzle wirth combined butter and oil
and tip with lemon slices. Bake in 400 degree oven 15 minutes or until
flesh is no longer translucent.

To Prepare Mustard Sauce: Lightly saute shallots in butter; add wine and
reduce until nearly evaporated. Add cream; cook and stir until thickened.
Add mustard, chives, and parsley. Season to taste with salt.

To Serve: Ladle serving of sauce on serving plate, arrange lemon topped
salmon on sauce. Garnish with pear tomatoes and parsley sprigs.
