How about a brownie turtle sundae?

Buy some brownies from the bakery (or make them yourself) top with a scoop of ice cream, some high quality caramel sauce that's been warmed up a bit, and some chopped pecans.

YUM-O!

Ice Cream Pie

1 stick butter
1 package Oreo cookies
1 qt favorite ice cream (I like mint choc chip in this recipe, but any flavor that goes w/Oreos would work)

Leave the ice cream out until it gets soft. Melt the stick of butter in a large bowl in the microwave. Put the Oreos in a Ziploc bag and crush to your preference. Add the crushed cookies to the butter and mix well. Lightly spray a 9x13 pan, add cookie mixture and press to make a crust. When the ice cream is soft enough, spread on top of cookies. Refreeze for a couple hours and enjoy!

I made this for our 4th of July gathering and it was a huge hit. Also good w/ a bit of choc syrup on top.

Get some brownies, a tub of Cool Whip, some chocolate pudding, a bag of chocolate chips and a deep bowl.

Crumble some of the brownies to make a layer on the bottom of the bowl, then put some of the pudding on top of that. Put 1/3 of the cool whip on top of the pudding and sprinkle with some chips.

Do that two more times, making sure that the cool whip and chips are the last layers. Cover with plastic wrap and put in the fridge for about 2 hours.

It's called a trifle...my sister makes it and puts raspberries on top of the cool whip with the chips.

chop up fresh fruit like mangos, pineapples, and strawberries into bite size pieces, like the size of playing dice. add some grapes into it too. , and then mix up all the fruit.
then pour the fruit into individual ice cream type cups or whatever you have, and top the fruit with ice cream. i like it with vanilla.
