My daughter does it 2 ways. She steams it and drizzles it with butter when finished and /or also garlic and salt and pepper. She also slices it thinly and rolls it in flour and frys it in hot oil both sides for a few minutes. Season to taste.

This is sooo good! I'm the only one that I know of that makes it like this and everyone loves it.
Slice up your squash and cook it in water until done. Drain Well.
Chop up an onion. (about the size of a quarter)
Put squash and onion in casserole dish.
Add 1 small can of chopped tomatoes
Mix the above ingredients.
Top with grated Mozzerella Cheese.
Bake in oven at 350 until cheese is a nice brown color. (about 30 min.)
You can add a little oregano if you like, and you can add a handful of the grated cheese into the mixture if you'd like. This dish has almost an Italian flavor to it. It's really good.

I grill it and drizzle olive oil on it w/salt and pepper and Parmesan cheese! Or I love zucchini lasagna! And last but not least i make a hell of a pasta primavera w/ zucchini,yellow squash, and cherry tomatoes!

Grate it, and press all the gratings in paper towels to sop up the moisture. Then butter some loaf bread, top with zucchini gratings, some seasonings (salt, pepper, basil, etc) and shredded cheese. Bake in the oven until the cheese melts. Very tasty and easy!

Zucchini can be shredded and used in ground turkey for moisture and flavor. My husband likes to make eggplant Parmesan but had no eggplant. He used zucchini instead and it tasted wonderful! Neighbors and family have asked for the recipe for his 'eggplant' Parmesan.

I either make my own beer batter or by the beer batter that they sell in grocery stores near the seafood and deep fry it. Slice it real thin, dip it in the batter and put it in about 1 1/2 inches hot oil, turn once and when it's brown it's done. Serve with ranch dressing - yummy!!!!!
