Wanting to date your psychiatrist is perfectly normal-- it's actually called transference (see the link below).
Many people think it's actually indicating that you are progressing along in therapy.
Now, actually dating your therapist is a very bad idea. There should be no sexual or intimate contact between the two of you-- EVER. Even after you've discontinued your professional relationship. There is a power-dynamic that exists between a patient and a therapist, so in some ways it's actually a type of abuse.

Absolutely not!!!! It is considered malpractice for any kind of mental health professional to have a romantic or sexual relationship with a current OR previous patient. Your psychiatrist could lose his medical license. There's very good reasons for this.You should feel free to discuss any issues with a counselor. It's very easy to exploit someone when you know intimate details about them. Many people become very emotionally attached to a therapist if it is someone who appears caring and concerned. After all, how many people in your life can you tell absolutely anything and not worry about how it will affect your relationship? In short NO NO NO NO!!!!!

Bad idea... really crosses the line of doctor/patient professional relationship, and this relationship is built on trust and respect. I imagine most Psych's like to keep their work and their private life separate.

Lol, I can see that...because you have to tell them everything and that can be very personal and then you feel very close to them.
But maybe that's a bad idea because, you know, you're paying them to listen to you and they have to, it's not like they're really interested in you?
