Perhaps they don't really mean that you should be cutting your lunch break short, just that you are really important to the operations of your office/workplace.
However, if they are really meaning to say you need to shorten your time on your lunch, but you are supposed to get an hour, then just ignore them. At least in California it is mandatory that you would get a 30 min "lunch" break if you are working at lest 8 hours, but if you work less than 8 hours, then the 30 min break is not mandatory for an employer to give an employee.
I think I'd go with the first thing I'd said though, you are probably just important in your position at work.

We work 12 hour shifts at work and they only give us a 15 minute break at 9 am (or thereabouts) and lunch break can be anytime after 11am but only for 30 minutes. They say there is another break we can take at 5pm but nobody ever takes it. So I'd say, 30 minutes. Messes up your stomach but it is possible to do.

Well.....sometimes it's half an hour for lunch with two fifteen minute breaks. Also some places give you that hour with two fifteen minute breaks or ten minute breaks. If you work part-time , in some cases, no break at all or one 10 minute break. I have experienced all of these scenarios.

30 minutes but by the time you get your lunch and find a spot to eat, your break is over!
I think an hour should be enough, give you time to eat and relax before heading back to work.

If they give you an hour, take the hour. I hate beating around the bush. If they want you back sooner, they should cut your lunch hour to a half hour.

If you have an hour... take your hour. If you are paid hourly and come back early make sure they pay you the OT. If you are salaried, then take every last second of your breaks.
