Brine + Pork Chop= best pork chop.
Let's say, 2 qts. water. 1/2 cup kosher salt, 1/4 cup sugar, 2 bay leaves, 5 pepercorns.
Bring to a simmer for five minutes. pour this liquid over 1 qt? of ice to cool it down, should disperse the salinity also.
Check flavor, should be pretty salty but don't worry, that's the idea. soak pork in liquid for two hours, pat dry and grill. VERY EASY. Very tasty.

This is the simplest I've ever seen, and pork chops are so delicious on their own that it isn't necessary to cover them with a lot of stuff.

Braised Pork Chops

4 pork loin or rib chops, about 1/2 inch thick
I teaspoon salt
1/4 teaspoon pepper
1/2 cup pineapple juice, apple juice or water

Cook pork chops over medium heat until brown. Sprinkle with salt and pepper. Reduce heat; pour juice or water on pork. Cover and simmer--extremely low heat--until done, 20 to 25 minutes. Remove pork chops to warm platter and prepare gravy with the pan drippings if desired.

This is so easy.

Preheat oven to 350 degrees
Quickly brown and season (salt, pepper, sage) both sides of pork chops, but do not cook through.
Prep a 9x13 baking pan with non-stick spray
Place pork chops in pan

Mix together 1 pkg. dried onion soup mix, 1 bottle Russian salad dressing (no fat version okay) and 1 jar marmalade (or peach jam, or apricot jam - your choice of jam!). Pour over pork chops and bake till done.

Sides: corn on the cob and a lettuce salad or coleslaw.

The breaded pork chop recipe is good but i have a suggestion for breading technique. Before you dip the chops into bread crumbs, dip them into flour first. Shake off the excess flour then dip into the egg and then the crumbs. It just makes everything stick better and you end up with a very crispy coating.

You can also do stuffed pork chops easily. Get the thick cut boneless chops and a box of Stovetop stuffing. Make a cut on the side of the chop with a very sharp knife and cut all the way into the chop without cutting all the way through. Prepare the stuffing according to the box and stuff the chops. Bake at 350 for about 40 to 50 minutes and serve with brown gravy. That way you have the meat and a side dish.

Brown the pork chops over med. high heat. Then mix a can of cream of mushroom soup with a can of water and pour over the chops. Cover and simmer until tender. This is great and the soup makes the very best gravy!

Saute onions, celery in 1/3 stick butter, add 1/4 cup water, then add bread crumbs, bells seasoning, salt, pepper, and garlic powder. Place pork chops in oven pan, and top them or stuff them with mix. Bake 325-350 degrees until done, about 45 min to hour.
