i lost the one that i had. it was very simple. it was made with hot sauce, water and i added rice to it as well. that is about all i remember of it. it was low-fat too. anyone with anything that is close to that?

ok i found it..it is from "the south beach diet quick and easy cookbook"
1 tbl canola oil
1 small onion, chopped
1 jalapeno pepper,diced
2 garlic cloves, minced
2 tsp ground cumin
5 cups lower sodium chicken broth
1 and one half lbs. chicken breasts, cut into 2 in. strips
2 cups mild refrigerated fresh salsa
salt and pepper to taste
(optiniol) add 1 cup cron and 2 cups rice
heat oil in a large saucepan over med. heat.add onion and jalapeno;cook;stirring often, until vegetables are tender, 5 mins. stir in garlic and cumin; cook 30 seconds more.
add broth, increase heat to high, and bring to a rapid simmer.
addc hicken and cook until no longer pink,about 3 mins. stir in salsa and bring back to a simmer,season with salt and pepper to taste, serve hot with tortilla chips.
makes 4 (2 1/4 cup) servings

CHICKEN, LIME AND TORTILLA SOUP

1/2 lb. chicken breast, boneless and skinless
4 cups chicken stock
juice of 3 limes
1/2 cup tomato juice
1/2 cup chopped red bell pepper
1 tsp. chopped green chilies
1 jalapeno, chopped
1/4 cup cilantro, chopped
2 tsp. Worcestershire sauce
3 green onions, chopped
1/4 cup rice
1/4 cup corn
1 avocado per each bowl (diced small)
1 cup mixed Mexican cheese (shredded)
1 tsp. minced garlic
1/2 tsp. ground black pepper
salt to taste
tortilla strips

Simmer chicken stock, tomato, Worcestershire, and lime juices with the jalapeno, cilantro for 45 minutes.
While simmering; grill the chicken until cooked all of the way through, then dice into small cubes or strips.

Strain soup and add green onion, chilies, red bell pepper, rice, corn, garlic and simmer for 20 minutes.

Place the tortilla strips, diced Avocado and shredded cheese on a side plate to be added by the guests as desired. (To make sure that your avocado doesn't turn brown toss it in some extra lime juice.)

CHICKEN TORTILLA SOUP

6 corn tortillas, cut into 1/2" strips
1 sm. onion, chopped
1 clove garlic, crushed
2 tbsp. vegetable oil
1 (4 oz.) can chopped green chiles, undrained
2 cans chicken broth
1 can beef broth
2 cans cream of chicken soup, undiluted
3 (6 3/4 oz.) cans chunk style chicken or 1-1 1/2 lb. cooked cubed chicken
1 c. water
2 tsp. Worcestershire sauce
1 tsp. ground cumin less or more to taste
1 tsp. chili powder less or more to taste
12 oz. Velveeta cheese

Saute onion and garlic in hot oil in a Dutch oven or large saucepan. Add remaining ingredients except cheese and tortilla strips; bring to a boil. Cover, reduce heat and simmer 15-20 minutes. Add cheese and tortilla strips; simmer uncovered until cheese melts.

2-3 tablespoons olive oil
1 large onion, diced
3 garlic cloves, minced
4 hot peppers, de-seeded and finely minced
1/2 large green bell pepper, diced
1 stalk celery, diced
2 teaspoons Mexican chili powder
1/2 cup white rice (NOT instant)
2 (32 ounce) boxes chicken broth
1 (28 ounce) can crushed tomatoes
2 (10 ounce) cans white meat chicken, drained
2 (15 ounce) cans black beans, rinsed and drained
2 cups frozen corn
white corn tortilla chips
sour cream (optional)

I have a super EASY chicken tortilla soup for those tired or lazy days. I always keep cooked and chunked chik. breast in the freezer so I can make a meal in a jif.Use a large jar of Pace salsa w/cilantro and add a carton(or 2 cans) of light chicken broth (I make my own and freeze it also) into a large saucepan.Add cumin or more red peppers if you like. When it has heated throughly, add chicken chunks, and serve w/ tortilla chips,sour cream, or avacado. Quick as a wink and good. I have other recipes that takes hours, one is from Turtle Creek Mansion in Dallas, Tx. It is great but very demanding!

INGREDIENTS:
4 cups chicken stock

1 can diced tomatoes with juice
1/2 Jalapeno pepper, finely chopped, optional

1 medium carrot, diced
3/4 cup corn kernels
1 cup cooked chopped chicken
1/2 cup shredded Monterey Jack cheese or Mexican blend
1/2 tsp. ground black pepper
Salt to taste
vegetable oil
3 corn tortillas cut in strips about 1/2-inch wide or purchased corn tortilla chips
PREPARATION:
Simmer chicken stock with tomatoes, lime juice, jalapeno, green chiles, cilantro, green onion, carrots, and corn for 45 minutes; add chicken about 5 minutes before done.
Heat about 1 inch of vegetable in a deep saucepan to approximately 360° or use a deep fryer. Cook tortilla strips in batches until crispy - just a few seconds for each batch. Top each bowl of soup with tortilla strips and shredded cheese, or serve on the side.
Serves 4.
