Chili Mac and Cheese:
2 tablespoons chili powder
A few dashes dried red chili flakes
1 cup crushed yellow corn chips
1 tablespoon vegetable oil
1 small lime, zested

Stir the chili powder and chili flakes into half of the mac and cheese base. Pour into an 8 by 8 by 2-inch baking dish. In a mixing bowl combine the crushed corn chips together with the oil and the lime zest. Top the mac and cheese with the corn chip mixture and bake 15 minutes or until the topping has nicely browned and pasta is bubbly and creamy.

When i over cook and make a huge pot of chili i use the left overs for chili mac. (you can also use canned in a quick hurry) I boil pasta according to pkg mix in my chili and some shredded cheese toss into a baking dish and top with additional cheese and onions and bake till cheese is golden brown around edges. Its great if you like spicy chili and others dont cus the pasta and cheese cuts out the extra bite in the chili.

Easy and simple dish to make.

1 lb ground beef
1 (15 ounce) can chili beans
1 (15 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes
1 medium diced onion
1/4 cup diced green peppers
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 teaspoon salt
1 teaspoon sugar
1/2 lb cooked macaroni

Brown meat,onion, and green pepper.
Drain.
Add remaining ingredients except macaroni.
Bring to a simmer.
Cover and simmer for 30 minutes.
Add cooked macaroni.
Add any type of cheese you like and as much to suit your taste
Stir well and serve.

CHILI MAC

1 lb. ground beef
1/2 lb. uncooked elbow macaroni
1 (16 oz.) can tomato sauce
Italian seasoning
Onion powder
Garlic powder
Salt & pepper

Cook macaroni in separate pot according to the package directions and set aside. Brown beef in skillet until crumbly. Drain, leaving about 1 tablespoon of the grease in skillet. Add tomato sauce. Now add the cooked, drained macaroni and mix well. Stir in the seasonings to taste. Then simmer about 10-15 minutes to blend the flavors. If not moist enough you may add 1 (6 ounce) can of tomato sauce.

Top w/ your fav cheese!!!
