Whenever we go somewhere for a back yard BBQ, I am asked to bring my macaroni salad. I think the "secret" that makes this macaroni salad different from others is the mixture of miracle whip and mayo. You know, some people like mayo...some like miracle whip. This way, everybody is "half" pleased!! This is another one of my "throw together" recipes, so I have tried my best to give some type of measurements.

1 box small shell pasta, cooked and drained
1/2 cup mayonnaise
1/2 cup Miracle Whip
1 small sweet onion, diced into small pieces
4 hard-boiled eggs, chopped
1 tablespoon sweet pickle juice
1 tablespoon sugar
colby cheese or monterey jack cheese, diced into small bite sized pieces

NOTE: The measurements on the miracle whip, mayonnaise, pickle juice and sugar can be adjusted to your taste.
Honestly, I never measure"exactly."
Also, use as much or as little cheese as you would like.
Cook macaroni according to directions.
When draining, run cold water over to keep it from sticking together and to"chill" it.
Mix mayonnaise, miracle whip, onion, pickle juice and sugar together to make"sauce."
After macaroni is completely drained, mix macaroni,"sauce", eggs and cheese until everything is coated and mixed well.
The longer it chills, the better it gets!

Cheese stuffed tortilini (either frozen, dried or fresh) cooked by package directions, then rinsed in cold water.

Add: sour cream and mayo until desired consistancy

Flavor w/: 1 package zesty italian powdered salad dressing mix
dash celery salt
1 teaspoon sugar
couple dashes white pepper
1/4 cup parm cheese

Adjust seasonings to personal taste.

Be sure to make the day before - tastes better the next day! May need to add more sour cream/mayo if not creamy enough.

If desired, you can add frozen mixed veggies to the pasta about half way thru the cooking time to add more flavor.

Creole Macaroni Salad

8 ounces cooked macaroni, rinsed and drained well
2 cups diced tomatoes
3/4 cup shredded Cheddar or Monterey Jack cheese
1 cup mayonnaise
1/4 cup sliced stuffed olives
2 tablespoons grated onions
1 small clove garlic, finely minced
1/8 teaspoon cayenne
lettuce leaves
PREPARATION:
Chill macaroni and measure 4 cups. Combine with remaining ingredients and serve with dressing on lettuce leaves.

INGREDIENTS:
1 (16 ounce) package macaroni
1/2 cup mayonnaise
1 cup cucumber - peeled, seeded and chopped
1 tablespoon dried minced onion 1 cup diced ham
1 cup shredded Cheddar cheese
3 tablespoons olive oil
3 tablespoons white wine vinegar
salt and pepper to taste

DIRECTIONS:
1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
2. In a large bowl, combine the pasta, mayonnaise and mix well. Stir in cucumber, onion, ham and cheese. Mix well. Drizzle oil and vinegar over top and toss. Refrigerate for at least 4 hours.

Hi,



1 lb. macaroni
1 Cup of Salad dressing ( Mircle Whip)
1/2 cup chopped Green peppers
1/2 cup chopped Red Onion
1/2 cup chopped Celery
1/2 cup Sweet pickle relish
1/8 cup of Mustard

mix in large bowl and let chill

ps. sometimes I use Tricolor macaroni and / or substitute ranch salad dressing for Mircle Whip and add crumbled bleu cheese.

Elbow noodles
1/2 medium onion (finely chopped)
1/2 cup mayo
2 boil egg ( optional)
1/2 cup of shredded carrots
1/2 green peppers
1/2 celery...
dash of mustard
sugar

I use a little ranch dressing mixed with mayo. I also add a little pimento to add some color.

Boil elbow noodles about 1/2 the box, boil egg in the noodles so they can cook together.... once noodles are ready.. drain and rinse with cold water... add all ingredients listed above.. only add all other ingredients. refrigerate and eat... enjoy. you can add tuna, ham or other meats you like to this also.

MACARONI SALAD

Ingredients:
------------
1 lb. box elbow macaroni
Hellman's mayonaise (to taste)
1 6 oz can of tuna fish
1 6 oz can of tiny shrimp
chopped onions
chopped green pepper
chopped celery
dash of garlic
1/4 cup of Catlina salad dressing
green relish (optional)

Instructions:
-------------
All of the vegetables you measure to your taste delights. Cook
macaroni, after it is cooled, mix other fixings and chill.

my sister just came down here to texas and brought a pretty good recipe.....its generic but you can add or take away from this.
1 big bag of noodles[not overcooked} elbow macaroni
8 eggs
1 onion finely chopped
2 green bell peppers finely chopped....a crunch in every bite !
mayonaise,salt and pepper and paprika to taste.

chop up onions and celery and put mayonnaise with the cold cooked macaroni

Try it with diced chicken breast, broccoli floweretts, sliced carrots, and mix with alfredo sauce, but serve cold.
