Hello,

I suppose you mean Mandarin Chinese, well i've decided to include some more dialects

Cantonese Chinese,
hello 你好 nei5 hou2
good-bye 再見 zoi3 gin3
bye-bye 拜拜 baai1 baai3

Mandarin Chinese,
hello 你好 (ní hǎo) knee-how
good-bye 再见 / 再見 (zàijiàn) dzai-jyen

Shanghai Chinese,
Hello, non ho
good-bye: tsewe

Taiwanese Chinese,
Hello. 食飽未? Chia̍h pá boeh?
Goodbye. 平安 Pêng-an

Saying you speak chinese is sort of like saying you speak european....but in mandarin chinese hello is 'ni hao'...pronounced like knee how.

Ni hao ma? (pronounced Knee How Mah).
It's not literally hello, but it's a standard greeting. It means "how are you". Literally it says "are you good?"
