You should say nothing.
This is one of the quirks of etiquette. A fart is something that everyone is supposed to pretend never happened, so saying "excuse me" or anything else breaks this rule. You are assumed to have no control over flatulence.
It's different with a burp or belch, because you are assumed to be in control of that, and so should say "excuse me" or something similar when this occurs.

Absolutely nothing admitting to the fact that you just farted. Say, "Oh my gosh, that was my shoe/chair/anything besides what it actually was." Farting is extremely rude and embarrassing, so pass it off if possible. But you shouldn't pass it off on another person, so try an inanimate object first!

According to the link below, "Surviving Dating's Most Embarrassing Moments" (adapted from: Dating For Dummies, 2nd Edition," you should "avoid breaking out in a 15-minute nervous laughing jag. Apologize once and then (if possible) open a window."
I think that is the most polite thing to do.

You can never go wrong with "Excuse me." Sometimes, it's best not to say anything at all -- especially if you are in a large group of people.
My four year old says, "That was my gas...."

I would blame it on the person next to me. "OMG! You are soooooooo nasty!". Or, you can just own it and say. "Ahhh! That's definitely a keeper!".
