Chilli con carne? Fry onions and mince in casserole dish until mince is cooked through, then add tomato sauce, kidney beans (buy canned - no soaking required) and crushed garlic. Stir in italian herbs, salt and pepper and simmer for 5 minutes to heat through. Serve with simple jacket potatoes and some green vegetables or a salad.

Slice lots of potatoes, carrots, red and yellow onions put in a oven pan and pour some fine olive oil over them.. add a couple of sliced garlic cloves, pepper salt and maybe sprinkle some dried rosemary over it.. In the oven until they soften and look yummy..

You said you didn't want cheese - but have you tried marinated grilled haloumi (Greek sort of rubber like cheese)..?? Slice cheese, marinate in oil with chilli and pepper, put on sticks and add it to the veggies in the oven when u think that they are almost done (takes 5 minutes! But you can marinate them for a couple of hours..)..

Make a tomato salad with sliced tomatoes, red onions olive oil(gotta love that!!), some vinegar pepper salt and (if you like it) mined garlic and fresh basill... Yummy!! (can be prepared a couple of hours ahead)

And then - you should of course serve it with a nice tzatsiki (Greek yogurt with cucumber and a little garlic and salt.. can marinate over night).. and a nice freshly baked bread!!

This is soooo good.. And the ingredients are not expensive - and it's really easy to make, as you can prepare everything ahead!

(If you really don't want cheese, I'm sure it will be nice with meat as well.. but I'm a vegetarian, and trust me the cheese is lovely!!)

End meal with some fresh fruits, like melon and grapes or something..

Aewwgghh.. getting hungry over here.

Best of luck!!/Miss E

2 ideas.
1:- try the easiest meal i know. get 2 tins of steak stew empty into a casarol dish, put in the oven on a medium heat, and then make mash. mmmmmm well easy and only takes 30 mins.

the other one is a little more complicated but well nice. and worth the effort you will need:
*one tin of campbells condensed cream of chicken soup
(really has to be THIS soup, no other one works, trust me i tried)
*2 carrots
*1 medium onion
*a handful of pearl barley
*2 large or 3 small chicken breasts
*dumpling mix
and finally you will need to use the empty chicken soup can for water

TAKES 2 HOURS

empty soup into oven proof dish and fill can 2 and a half times with water and empty into dish too, put in the pearl barley. peel and chop carrots and onions into small cubes and also cut the chicken into small cubes and put both into bowl. mix all toghether then cover, and put into oven on a medium heat for two hours. make dumplings and put onto the top of the stew 20 minutes before the end of cooking. uncover for the last bit. SERVE. SALT AND PEPPER TO TASTE.

I LOVE THIS MEAL ITS MY FAVE.

HOPE YOU LIKE IT. LET ME KNOW IF YOU LIKE IT.

Check out any of Rachel Ray's 30 minute meals. She has a ton of them, and most of what she does is super easy, but wonderful.

Stir Fry? Always easy. Chop whatever you want to put into it, I like red and green peppers, mushrooms, onions, carrots, asparagus, spring onions. Chicken too if your not veggie. Chuck in noodles when ready. Soy sauce. and your ready to go.

You could fix grilled steak, chicken, or fish, serve with a salad and vegetable, and a simple dessert. It really depends on what they like, but just stick with meat and veggies and they should be happy.
