Yes, it's true... Though what happens isn't really an "explosion": it's just the release of all the carbon dioxide in the diet coke. The reason it does this is because the gum arabic (and gelatin) lower the surface tension, allowing the gas (carbon dioxide -- a.k.a. carbonation) to escape. (Shaking up a can also loosens surface tension, which is why the can "explodes" if you open it after shaking it up. If you let the can sit, the force of the air "re-saturates" the soda with the carbon dioxide; the difference between that and the Mentos is that the Mentos are still present whereas you have stopped shaking the can.)
Naturally, gas rises to the top; Mentos sink to the bottom. So now you have all this gas built up on the bottom of the bottle, trying to escape (go up)... There is so much gas trying to escape that the result is some of the soda goes along with it.
Diet coke seems to work better (possibly because of a different [lower] level of surface tension) and is also easier to clean up (because sugar is sticky and artificial sweeteners aren't).

If thats true, what happens when you eat menthos and drink diet coke?
I've had them together and my mouth or stomach didnt explode.
