Why it is translated as a rib so often, I have no idea, but it isn't all that accurate. What is said is that God removed something from his side. The intention, I believe, is not that women were somehow subservient man, but on an equal bearing. God puts Adam to sleep so it is clearly a part of him which is used to become woman. The conundrum remains, of course, how woman ended up being able to talk or anything else.
One of my favorite jokes in this area is as follows:
Adam comes to God to say he is lonely. God tells him that he will make the perfect mate for him, extremely attractive, always taking care of him, watching over him, cooking and washing for him and always being obedient to his desires.
Adam says, "That sounds good! What will this cost me?"
God responds, "An arm and a leg."
Adam thinks about this for a few minutes before responding, "What can I get for a rib?"
The rest, as you know, is history.

"You will till the soil for all your days, and your wife will talk and talk and talk until Noah brings the cows home.
Noah has a big job ahead of him so dont hold your breath!!"
