I found it in the "Apple Lovers' Cookbook" I picked up at a local farm market.

6-8 medium apples, cored and sliced
1/2 cup water
1/2 cup sugar

6 servings

In a 2-quart casserole, combine apples and water.
Cover and microwave 8-10 minutes on HIGH until apples are soft, stirring once during cooking.
Mash apples to desired consistency.
Stir in sugar.
Cover and allow to stand a few minutes.

Core and peel apples, slice and place in a glass bowl, add a small amount of water, cover, cook til apples are soft, place in a mixer, food processor, add a bit of sugar (and a bit of Cinnimon if you like) and mix or grind until you have the desired applesauce texture you prefer.

you don't

applesauce is just crushed apples, sugar (optional) and water. I would suggest a blender, NOT a microwave
