sour milk, 1/2 cup milk and 1/2 teaspoon vinegar or lemon juice. let it set up, it will curdle.

you can use sour cream or yogurt. I rarely have buttermilk around to use. some of my recipes have ststed these substitutions.

depending on what you are baking, regular milk is just as good
