If you aren't able to find single portion recipes, then make normal recipes for 4 or so & then freeze the extra portions in single serve containers. That way you'll be making yourself freezer meals to heat up in the microwave instantly.

If you go to Allrecipes.com, you can adjust the serving size to 1 and it adjusts the recipe for you!
Salads and wraps are a good way to go.
Asian food, like stir-fry's or curried dishes are also easy to make in small portions.
But to save yourself money and time, every time you cook, make enough for two meals and freeze one serving for a later date.
Don't give up cooking or resort to fast food just because you're single. You won't be single forever and it's good to take this time to be creative and try lots of things out for yourself!

Stir fry's are also good. It will last you a couple of days and taste even better after a day or so once the flavor soaks in. I also buy chicken breast, separate them into individual freezer bags before I freeze them, then I can make a single serving.

Kraft foods has "Dinner for Two" recipes. That way you have dinner and left overs for the next day.

I don't know about you, but why cook? Raw vegetables are very good for you. I like to build a nice, complicated salad. I add a litte chopped chicken breast or diced ham for protein (available in precooked bags in the refrigerated section). Add a little of your favorite dressing, and your set.

Refried beans heated up. Wrap then in a tortilla (heated in microwave for about 30 seconds). Sprinkle with cheese. Wrap like a burrito. If you want to put on sourcream, lettuce, tomatoes, etc. that's an option to - or whatever you choose.

Simple, fairly quick, and tastes great.

EGG & CHILI CASSEROLE

10 eggs
1/2 C butter
1/2 cup flour
2 four oz. cans chopped, mild green chilis (Ortegas)
1 tsp salt
1 pint cottage cheese (small or large curd)
1 1/2 lb mont. jack cheese (shredded)

Grease 9x13 pan lightly.

Whip eggs until blended.

Add remaining ingredients.

Stir together.

Pour into pan.

Bake at 350 until set. (30-45 min.)

Pasta with a simple red or white sauce (so many companies make fabulous jarred sauces), and you can make as much or as little as you need; meat loaf (I like a pound of burger mixed with a pound of Italian sausage -- slice and freeze leftovers to reheat); grilled deli meat and cheese sandwiches (made like a grilled cheese) and a side salad -- as for websites, I think it would be worth a look at foodnetwork.com -- they seem to have recipes for every taste and lifestyle.
