That sound is called borborygmi by the way. When the brain decides its time to eat it causes the stomach to contract which moves through the intestines. These contractions cause the rumbling and gurgling sounds.

If it happens before you eat, there is a sensor in your brain that tells the stomach when your blood sugar is starting to decrease, your stomach, in turn, responds by grumbling to let you know it's time to eat.
