BIG MAMA’s FRIED CHICKEN

(Makes 8 servings)

2Chickens cut into breasts, legs, wings, and thighs
4large eggs
¼cup water
3cups all-purpose flour
2Tbs. Salt
1Tbs. Paprika
2tsp. ground black pepper
3 to 6cups shortening

Rinse the chicken and pat dry.
In a medium bowl, beat together the eggs and the water.
Combine the flour, salt, paprika, and pepper in a bag and set aside.
Heat the shortening in a large deep skillet until it is hot, but not smoking. If you’re using an electric skillet, heat it to 400º F. (200º C.).
Dip each piece of chicken in the egg mixture and then place in the bag with the flour and shake to coat. Let stand for 4 or 5 minutes.
Fry three to five pieces of chicken at a time for about 15 minutes, until they are browned and cooked through.
Drain on paper towels.

Take the skin off first while washing the chicken, then prepare the flour coating with salt, pepper, and garlic. Mix coating well in a bowl or a paper or plastic shopping bag. put chicken in bag and coat well with flour mix and place in hot oil and cook well. Thats it, a quick and easy way to get wonderful fried chicken. ENJOY

Hi
in a bowl or container place your flower and spice mix-makesure it stays dry.
in another bowl beat 2 eggs.
wash and dry the chicken pieces and then dip into egg mixture. place the egg covered chicken into the dry mix when the chicken piece is totally covered put onto clean plate. Follow this method until you have all your chicken pieces done.
Make sure that the oil/fat is in deep fryer or vessel and is very hot.
Carefully place the chicken pieces into the hot fat.
wait until the coating is brown and the chicken can be cut open to make sure it is cooked- takes about five to seven mins. However if the pieces of chicken is big it won't cook properly.
I cut one breast of chicken into three or 4 pieces for best results.

There are several good ideas already but one that you really need to remember is not to move the chicken around. Put it in the hot skillet and leave it until the 1st side is cooked (about 10 min or so) then flip. Moving the chicken around will make the coating come off and it won't be crispy.

If the chicken is wet, the coating won't stay on. The reason you pat dry and then dip in flour is to blot up any wetness, which will allow subsequent layers to stick.

Coat the chicken pieces with a single coat only, if the batter is too thick it will flake off when imersed in hot oil.

**Chef David** gets my points! That's exactly what you do. Dang I was right there too. If you just dip in egg and flour it's too heavy for the flour to stick. And you DON't fry chicken in breadcrumbs alone or with milk... I'm a white girl and even I know that! And hot oil IS the key

You need to use three coats. First coat it in flour. Thencoat it in egg; whisk an egg and a bit of water together. Lastly coat it in a bread crumb or savory coating.

Try coating your chicken with buttermilk before flouring it. Also, you need to make sure that your cooking oil is hot enough.
