"Once bitten, twice shy" means someone has been hurt or wronged and will no longer trust people easily.
"Ignorance is bliss" means as long as you don't know someone is doing something that would hurt you, you can remain happy with that person. Once you know the truth, the happiness is gone.

You have learned from your experience not to make the same mistakes again, for the first part of this question. For the second part, is not ever knowing the truth is the best and being ignorant fo the facts...would prefer to remain in the dark than knowing the truth.

Ignorant can mean not to acknowledge something, an easy way of avoiding something. If you don't acknowledge something it's almost like it's not real, so then you don't have to deal with it and it's not your problem. It's bliss not to have to deal with problems.
