Some of my personal favorites include Pinchas Zukerman, Itzhak Perlman, Yehudi Menuhin, Isaac Stern, and Vanessa Mae.
I really like Perlman and Stern for the amount of emotion they can convey in their music. Have you ever seen the film "Schindler's List" or heard the soundtrack? Perlman plays with so much...love and tenderness and emotion, for lack of better words, that I still cry when I listen to the soundtrack.
I adore Vanessa Mae because of the energy she brings to the music. She is very young, and often her arrangements are faster in tempo than the traditional arrangements. She makes classical music accessible for those who would normally shy away from it. She's great.
I encourage you to check them all out, as they all play wonderfully.

Since you say "who IS", I assume you want living violinists. Some of the best known in the area of pure classical music include Itzhak Perlman, Maxim Vengerov, Gil Shaham, Hilary Hahn, Joshua Bell, and Sarah Chang. There are also those who have made names in crossover, such as Vanessa Mae and Andre Rieu.
If you want to include violinists who are no longer living, I could add to the list Jascha Heifetz, Isaac Stern, Nathan Milstein, David Oistrakh...the list goes on. Oh, and one simply must include Paganini.
