well it keeps u cool
but most of all u can see any chemicals or dirt if its on ur coat
if it was black or some other dark colour how would u see the dirt ?

White is associated psychologically as being, pure and sterile, therefore we feel more comfortable seeing lab coats in white as we want to believe that lab coats are actually sterile.

You only have to watch a western movie to associate a guy in white as "The Good Guy" or the guy in black as "The Bad Guy".

well u know scientists have working in very bad circumstance in past time.they had to work in dark frequently.so they wore white to help find others.
