Can someone explain to me how an oxidizer works, and why it affects physical items it these ways?

If by oxidiser, you mean 'oxidising agent', then it works by affecting the electrons surrounding a particular molecule, compound or atom.

Oxidising agents are particularly attractive to electrons - so when a substance comes into contact with one, it loses electrons and is chemically changed. This can manifest as a physical change.

The whole subject actually has very little to do with Oxygen, but the term arose because of the way it was first described, before the concept of electron exchange was developed. The only actual 'oxygen' based thing about oxidising agents is that they are a hazard in a fire, as they can sometimes continue burning without any oxygen!

Generally speaking, the best way to deal with oxidising (and it's reverse process, reduction!) is to remember the following mnemonic - OIL RIG. Oxidation (of a substance) Is Loss (of electrons) Reduction Is Gain.

An oxidising agent will oxidise (take electrons) from something else and is itself reduced. A reducing agent does the opposite.
