Okay, after consulting my Complete Idiot's Guide to Classical Mythology, I have come to the conclusion that the giants did not enjoy immortality as the Greek gods did, but they had superior strength since they were born from the blood of Uranus' castrated member. The gods were also told by an oracle that they could not win the war against the giants without the help of a mortal. And that's where Heracles came in.

You would have to know. The myths of Greece, Egypt, and Rome formed on a balance. There are times when there is a victory, and there are times that there is a fall. I mean c'mon, the good guys don't win every single time. Anyway, the Greek Gods were unable to defeat the Giants because the Giants put all of their effort and strength into defeating them, alas, the Gods would be victorious in the end, or perish.
Of course, that always egged on heros and heroines in the myths.

The Greek Gods could not defeat the Titans because the Titans were immortal as well. The Greek Gods had to settle for imprisoning them instead, as defeating them would never be possible

... I think you're mixing up your mythologies. The Greek gods didn't really have much of a giant problem - the closest thing I can think of is the war with the Titans, and they did win that.

The Aesir (Norse gods) DID have an ongoing conflict with the giants, in fact it's a major part of their cosmology. And they didn't win because they have yet to have the final war (Ragnarok) yet.

The Sky, Uranus, took his children that he and Gaia had and hid them deep inside of her(in caves.) The Titans wouldn't even let them out, but when the Gods where born, Zeus let them out to over throw their Brothers and Sisters-the Titans, Zeus then made them the smiths to the Gods, before Hephaestus. They made the weaponry for the Gods during the battle. Thats pretty much it in a nutshell.

This question really does not have any fact or actual answer because it's a matter of opinion. I can say Zeus was the unimportant and then turn to say Aphrodite was the greatest. If we had fact behind it Zeus would be more important for power and reign but Aphrodite had female beauty on her side to get what she wanted. Either way it's all the view of whom sees it. Personally in my opinion nymphs if you consider them gods.

There was a prophecy that's said that Herakles had to kill the Gigantes, because he was mortal but also a son of Zeus. And the Gods couldn't win this war if there wasn't a mortal fighting with them.
