When you lift weights, your purpose is to break down the muscles cells so they can grow back even stronger, well my question is that if i do 8 reps for about 5 times vs adding more weight so i can max my capability into 1 rep. will that be the same as doing 8 reps.

Lifting is based on intensity.
If you do 1 rep and rest for 5 minutes then do another rep so you do this for 6 sets its intensity is based on that.
Now another version of intensity is rest time, so if you do 8 reps for 5 sets but only rest for 30 seconds you are still getting an intense workout.
Either way you are going to build, muscle memory is what you want to trick if you hit the gym with the same exercises or routines, reps sets whatever you won't grow as fast as if you mixed it up every so often.

No. When you do reps at a lighter weight, you can conditioning the muscle. The result is that you tone the muscle or sculpt it so you get nice definition.

When you lift your max weight in one rep, you are working on strength training. So you will build muscle mass rather than sculpting the muscle.
