There is all kinds of different proffessions that do this; from zooligists to animal behavioralists. From marine biologysts to veternarians.
Discovery and other channels use a mix of all of these. Example Jeff Corwin is a conservationist (he does have bachlors in biology, but he has a masters in conservation) where as Steve Erlwin is a zoologist.
sorry, I forgot to mention there are even specialists in certian animals. I don't know which each of those are called.
