Cant I get the license and not work for the company I took classes with?

Absolutely - you can definitely choose whatever office you want to work with *after* you get your license. There is absolutely no connection with where you took your classes and where you end up working, unless you decide that that's where you want to work.

The only other thing I can think of is that maybe there are some offices that are willing to subsidize the cost of your classes if you promise to come work for them when you get your license. But so long as you're paying for the cost of your classes yourself, there shouldn't be any obligation to work for any particular company.

Yes you can, but only some companies will allow it. ALL who allow it will make you pay for the classes out of your own pocket.

why can't you just take classes from the company you actually want to work for?
