DOHC stands for Dual Overhead Cams. The cam and camshaft in a cars engine makes all the difference in the cars performance. Dual shafts mounted over (overhead)
the valves will give you maximum performance and fuel economy.

If you look at sections 5 - 15 of the linked page you'll see the Double Over-Head Camshaft of a Ford Sierra engine. It is visible once the engine's top cover (rocker cover on older engines) has been removed.
Along the camshaft are the pear-shaped/oval cams which open and close the valves.
There is a camshaft for the inlet valves and another for the exhaust (outlet) valves, i.e. two shafts over the valves.
The camshafts are driven by the timing chain from the crankshaft at the bottom of the engine. You can imagine the mayhem if the chain breaks and the pistons mangle the valves!
