I think if you really want to know someone, put them in situations where they become:
-angry
-jealous
-happy
-sad, and
any other extremes of emotion/behaviour.
Cruel, but the only way. Asking questions doesn't always get you the real truth.

You could try having them complete a meyers-biggs personality test - there's quite a few web sites that host the questions and then will provide the answers (free).

Have conversation on different issues with that person. You ask questions and let him/her answer. No help please in the choice of words.
