Sometimes they don't and sometimes they do. The people they do pick have talent of course, but it may not be as best as the other contestants. For example, on American Idol Mendisa had such a great singing voice. It reminded me of Aretha Franklin, but because of her looks and her weight I'm guessing not many people liked her. When you're a singer, judges don't only worry about your voice or your acting, they worry about your appearence. Does your looks make money? Is your appearence your downfall? Those are two main questions to the judges. I am 99% sure that Mendisa got out because she didn't have the advantage of being good-looking.
These talent hunts like American Idol usually require the nation voting, so it's the nations choice of person to choose. I prefer it this way then like Canada's/America's next Top Model, where the judges pick the winner. It's much more better if the audience expresses their choice.

That depends on how you define talent. They pick what they think is the most commercially viable product based on current trends. No, some of the most talented people never get past playing bar gigs.

no the real talent gets lost in the process..popularity supercedes talent.
