When the silks of the corn turn brown. The silks are the long strings that look a little like hair that are at the open end.

When the silks, the fibers that stick out of the top of the ears, are brown, it is ready. YOu can also peel back the shuck a bit and look at the kernals to see if they are all plump and the right color.

It should be tassled, and each ear of corn on the stalk should look full...... Try peeling back 1 ear to check color of the corn.....if you have white corn that is a little different......take a small, small bite from the top, and see how it tastes.... :-)

In New England, it is:
knee high by the 4th of July...
When the tassels turn brown, it's done. There is nothing like corn picked while the water is boiling. MMM.

when the silks on the ears turn a dark brown and ear feels firm you can always check by opening one just enough to see it will not hurt as long as you leave it to where you can close back up
