When the codification for stats was started, a lot of things began with "S". K was chosen as there is no other stat that starts with that and it is a component in the work "striKe"

dukalink has it right; S was already used for "sacrifice". Check out The Straight Dope below.

Edit: Sorry, Ricky S, but 'S' by itself means "Sacrifice" or "Save" or "Stolen Base". Saves can also be marked "SV", and sacrifices and stolen bases also have other 2 letter abbreviations. Shutouts are marked "ShO". Don't call other people wrong if you don't know what you're talking about. If you claim to be right, then cite a source. Anyway, dukalink's answer never said what S stood for, just that it was in common use for other actions, which it is.

All of you that answered this question are wrong. Because S stands for "shutout." I guess they chose K because it is easily identifiable backwards. (When you strike out looking you have to put the K backwards)
