As far as songs he wrote and recorded, probably "I Walk the Line".
I also really like "Ring of Fire", "Hurt" (great, and difficult to watch video) and a song he sang with U2 called "the Wanderer", which is on U2's Zooropa album.

I Walk The Line. when it came out it was a different raw new sound of country rock. Nice fast tempo, steady guitar and threatening vocal.
