Different types of microorganisms make changes to the texture (hardness), appearance, flavor and, of course, the smell of cheese. By breaking down different chemicals in the curd, like the fat and protein, different types of microorganisms, including bacteria, yeasts and molds, make new chemicals that change the aroma (hey, another word for smell!) and flavor of cheese.

Cheese, wine and bread. We must thank for this three marvelous products to bacteria. The process of turning liquid milk into solid cheese is due to the work of thousands of bacteria drinking liquids and leaving only milk's solid materials. Actually, you could say that cheese is what these bacterias dispose. Same process happens on four feet, the odor you smell comes form other kind of bacteria's... sheat. And that's why cheese smells like cheese.

There is actually chocolate cheese and Chocolate goat cheese and it smells alot like fudge, Normal cheese however probably smells like cheese because its made from milk and aged.

Bacteria makes cheese smell like cheese, instead of milk frm what its made from. Exactly the same as how yoghurt smells of yoghurt

Becuase if it didn't, it would smell like gym socks or feet.
Cheese is basically a form of mold. Fermenting moldy milk is what cheese is.
