Because the light is not "reversed", it comes straight back from the mirror. So the light from the head come back towards the head, same for the feet. Same for the left hand and right hand. It just LOOKS reversed.
When you move your left hand, the "left" hand of the image also moves, but since the image is facing you, and you are used to thinking of that hand as the right hand, it looks reversed, but it's still on the left hand side.

If a person is facing you and moves their right hand, then turns around and moves their left hand, it is always on YOUR left side.

It doesn't. The image is 2 dimensional. You're looking at yourself but the image is actually facing the same way as you. Not facing towards you. But because there is no third dimension, you see only the one layer of your front.
Try to think of it this way, if you could peal off a microscopic layer of the front of your body, skin, eyes, hair etc., and place it on a white smooth wall in front of you. it would look like you were looking back at yourself. But actually, the image is looking the same direction as you. It's a difficult concept but it's what actually happens. Think of that when you continue to study light waves and how they reflect and refract.

it's called a "mirror image" it's not you - it's a reflection of whatever is in front of it
