will a knock sensor tell the computer that the vehicle is overheating?

No.

A knock sensor simply notices a change in pressure/vibration in the engine from... a knock.
The sensor relays that to the PCM.
The PCM then may perform some adaptive strategies to remove/reduce the knock. And will illuminate the check engine light.

The ECT (engine coolant temperature sensor) will relay the information to the PCM about the vehicle overheating.

a knock sensor detects pre ignition or pinging and the computer will make some adjustments over heating can cause pinging but this isnt what this sensor is for

no, a knock sensor detects ping (predetonation) in the engine and relays the info to the engines pcm (computer) the pcm will try to eliminate it usually by adjusting timing
