I'm from NW PA. My grand dad use to take peach seeds and nectarine seeds or I should say pits stick them in the freezer for a few days to freeze. This will help crack the shell. He then took and put them in pots in the house and kept them watered, and poof a tree. As for the apples go with a starter pot and they will sprout. They don't need to be frozen to crack. Remember too some fruit trees need pairs to pollinate. So I would do at least two of each to be on the safe side.

I successfully started some Catalpa trees from seeds. What I did was wet two paper towels so they are thoroughly wet but not dripping. I put the seeds in the paper towels, folded them up in the paper towels. I then put the paper towel in a "zip lock" freezer bag and sealed it. I put the bag on top of (not IN) the refrigerator. In about 7-15 days the seeds should sprout. Once they have sprouted transfer them to a small pot with some soil and plant them. Once they are well established - you can transfer them to a bigger pot or you can plant them outside. (I also started and Avocado this way too.)

I would put the seed in the dirt and put a fence around it (like chicken wire) to keep the small furry animals from eating it, and let nature run its course. You could also start the seed in a flower pot in your house and transplant it when it gets bigger. When you transplant it outside put the fence around it to keep the rabbits from nibbling it off. Be patient, some seeds take a long time to germinate. Some also wait for certain times of the year.
