the ip address of the sending machine is included in the header of the packet being sent to another machine

there are 3 ways to hide it:
1. use software which has the ability to remove the address from the packet header
2. write your own software
3. intercept all packets before they are sent using a packet sniffer and edit the headers directly

on the whole its usually not worth the effort unless you are a hacker

Afterthought:
as another answerer says, use a proxy or nat so their address is used instead
