There are 100's of different types of light bars and patterns and different types of warning devices on police vehicles. Different officers use them differently and at different times than others.
To answer your question, I would say in your case where they have the ability to use just yellow lights they are still using them as warning lights for thier safety to the passing cars, but they are using yellow lights to save the person's dignity. This showing all of their friends as they go by them that they are just being helped by the police rather than being pulled over or arrested.
If you pulled over, tipically you get red and blue lights turned on as the universal sign to pull over. Some officer turn them off even while doing the traffic stop. Some light bars let you turn off different colors or even parts ( front or back ). The purpose for the lights in any case when stopped is so you don't get run over ( belive me you need it ) .

WRONG PREMISE. Color is the combination of light energy, the material we see, and our eye structure. Some animals see x-rays, or other forms of energy we cannot see but do not see color as we do, but they get along OK anyway. White is a combination of all colors so it is not true that it isn't a color. Unless you want to clarify that it is not any 'one' color but all of them at once. In this sense white is unable to absorb any light because it already has as much as it can have. In physics theory there is no such thing as a perfect absorption surface because even the best mirror we can make has tiny opening between the flecks of silver that let light through. But the color of a mirror is best described as silvered or white by us because it would have the least absorption. An object appears white to us BECAUSE it reflects most of the sun light back to our eyes. Black (NOT WHITE) is not a color at all but the absence of all light or color. It is true that black can absorb the most light especially flat black since it is not like a mirror surface reflecting light as in gloss black. So the question is in itself flawed. The darker the color the more light is absorbed. This is also true of heat energy and other forms which we can not see with the human eye. An object appears black to us because it absorbs most of the sun light. As the sun goes down all objects lose their color to our eyes. A personal observation. One time I was in a person's bathroom that had all black fixtures, curtains, tiles, the works. When I turned on the light I still couldn't see much more than the glowing filament of the incandescent bulb. Unusual and useless, in my humble opinion, but interesting...its fun to be a plumber sometimes, ha.

the answer isn't white even if you did consider white a color. White reflects most light, that is why it looks white. Black on the other hand absorbs most light, reflecting little. Of the other colors The primary colors), each reflects a certain wavelength, that's why it is the color it is. None reflect more than others, just different parts of the spectrum.

The main difference is not so much in the light patterns, but more in where you see the lights.
If the lights are behind you it usually means you're going to lose money.
If the lights are in front of you it generally means you're going to be delayed.
