Balsamic Vinaigrette is about as low-calorie as it gets.

I love Caesar salad, but I don't want a lot of fat. I put about a teaspoon of anchovy paste, a teaspoon of dijon mustard, a crushed garlic clove, one tablespoon of good quality olive oil, and some grindings of fresh pepper into a small container and mix very well. Then I add the juice of a large lemon. Mix thoroughly. You can add herbs such as parsley, thyme, tarragon or an herb mix like "fine herbs" or Shilling makes a "salad herbs" mix that is very good. Toss this on your salad, add a couple of tablespoons of shredded parmesan and you have lots of flavor but not very many calories.

This is my special low cal dressing:
1/2 a cup low fat yogurt
2 tsp. lite mayonnaise
1 tsp mustard
1 tsp ketchup
1tsp sugar(or less if using artificial sweetener)
1 clove garlic
2 tbs vinegar (cider, balsamic, wine)
1 tbs fresh basil
salt & pepper to taste

put everything in a screwtop jar and shake well.

voila!

vinegar and sweet and low or the other sweetener. when i get a salad at a restaurant i just ask for vinegar. i sprinkle two or three packets of sweetener over salad, according to size then drizzle vinegar over it. sweet, sour, really good and low fat, low everything actually. splenda, thats the other one.

Most salad dressing has fat. Please read the labels.

I like red vinager or fresh lemon juice.
