I have a choice between a propane gas stove and an electric stove. In the past, I have never liked gas for baking cakes etc. as the temperature fluctuations are too dramatic. I understand that the new (self-cleaning) gas ovens are better insulated and retain heat better. I have never used propane at all.
By contrast I have always liked electric baking. (I've never used a convection oven.) I do not like electric stove tops however and much prefer gas for that.
I only have room for 1 stove and can't split the two--as much as I would like to a gas stove top and electric oven.
I you find the new gas ovens OK for baking, I'd really like to know. If there is a disadvantage to propane over natural gas, please let me know that too.

I have a Bosch gas range..I love it. I can use the convection or choose conventional baking. It's insulated far better than my last range, but the price difference says it all...I can also convert this stove to propane if I need to. Choosing propane over natural gas usually isn't a "choice"..it's more a matter of availability. Many times people need a propane stove because they have no access to natural gas.Propane has to be delivered, and if you runout, well you'll just have to wait until a delivery can be arranged...better than cooking over a campfire, though.
BTW you know, there is a range that combines a gas cook top and an electric w/convection option oven. Also, you might want to rethink your bias regarding electric cooktops...the induction cooktop is absolutely incredible --- extremely responsive with no residual heat.

I have a gas top and gas oven.Its by Jen air, it was the only thing I could put in my kitchen. The oven can go either convection or not.
Its the best stove I have ever had.The top is a " down draft" vent meaning it has no overhead vent.
And you can purchase a griddle to go on one side instead of two burners ( easy to change in and out)
I keep the griddle on most of the time and use it instead of a pan.
I am sooooooo happy with it. top and oven for baking.
