Today is the birthday of one of my Junior High classmates.

That's the best way to express the thought although grammatically the original is correct but clumsy

Yes. It's confusing though. because the subject "one of my junior high classmates" is singular, but "classmates" is plural. You are correct. "Today is one of my junior high classmates' birthday."

IT'S CORRECT BUT IT SHOULD BE WRITTEN THIS WAY:

Today is one of my junior-high classmates' birthday.

junior-high is a compound adjective.
