Actually, I have dealt with Beef for about 11 years..My father was a meat cutter his entire life as an adult.the brown you are observing is what we term as PURGE..that is where the meat is loosing blood weight, if you smell the piece of beef you may get a small hint of sourness...you need to use this beef immediately..one the beef is entirely brown on surface, it will turn both in taste and quality. After the beef get total surface browning..it begins the rot process. consuming beef at this stage could lead to what alot of people term as food poisoning.

Steak that's red is simply more freshly cut than those that are darker. The brown doesn't affect the quality of the meat, nor does it affect the taste when the steak is prepared. Factually, meat that has been "aged" is far more tender and flavorful than freshly cut meat. "Aged" means that it has been let stand, sit, or hang at a controlled temperature to allow the bacteria naturally present in the meat to begin breaking it down. The meat turns dark all the way to the bone when done properly. There may even be patches of mold on the surface which can be cut away before using the meat.
If you want really good steaks, get a couple of large ones and put them in the bottom back corner of the refrigerator for a couple of weeks. Make sure the temperature is kept below 40 degrees Fahrenheit. Take them out when are fairly dark. Don't open the packages and don't get nervous about them. When you take them out, they won't smell like fresh meat, but neither should they smell putrid. Fry or charcoal them. They will be very good and I'm sure you'll be surprised at the flavor and tenderness.
I have worked with meat in grocery stores and have butchered my own on the farm we live on. I also watched and helped butcher when I was a kid about 55 years ago. So, I'm not telling you anything that I don't know about.

I grew up ingesting western foodstuff yet moved to New Zealand the place there's a huge Asian inhabitants and Sushi,sashimi and different eastern delights are extremely attainable.i'm getting greater excited approximately eastern foodstuff via fact it remains a novelty to me. its okay its just been sitting in the butcher shop for a while already when they a red they are fresh but when they start to go brown its when its been sitting out for a while also it could be that it was previous frozen and defrost and frozen again

If they were frozen and were not packed correctly this usually happens, check the smell after defrosting them, it will tell you if they're OK. If they were "fresh", maybe it's "old" meat, and preferably you should take them back.
